Samithi Kitchen - Naivedhyam Recipes
Trimadhuram Recipe:
Ingredients :
- Banana 2
- brown sugar or vellam or jaggery - 3 spoons
- kalkandu or rock sugar - 2 spoons
- ghee - 1 spoon
Method:
- cut Banana into small round slices.
- add jaggery or vellam or brown sugar to banana.
- add kalkandu or sugar candy to the mix and mix well.
- add ghee to the mix and mix well.
- Now, Trimadhuram is ready to offer to Lord Sri Guruvayurappan.
Ingredients :
- Banana 2

Guruvayur Nei Arisi Payasam (Guruvayur ghee rice Pudding)

This is naivedyam offered to Lord Sri Guruvayurappan as baby Krishna and given to devotees early in the morning only from 5am to 6am.
The devotees doing service to this temple observing vratam(fasting with austerity) will make the payasam. They will not taste a drop when they make it perfectly. Every drop of the payasam is very tasty, healthy and gives happiness to the mind.
Sri Guruvayurappan praptham will fill blissful feeling in our mind.
This payasam when served in a fresh banana leaf, with a ripe banana kept on top of it and little bit jaggery sugar added on top of it, mix and mush together and a glass of it if put it in the mouth, then we feel, this is the devaamrutha that Lord Sri Indra is taking, that is the thought will rise in our mind.
Ingredients:🥗🥗
-Red raw rice 1 cup
-Jaggery or brown sugar - 2 cups
-Dry ginger or chukku 1 teaspoon
-grated coconut - 1 cup
-cardomom 3 pods powdered
-pure ghee 3/4 cup
-water 4 cups
-cashew nuts - one handful
Method of preparation:🥗🥗
Please
-wash raw matta raw rice well 3 times.
-in pressure cooker, in a vessal add 4 cups of water and add red raw matta rice and boil it well until 4 whistles come.
-the rice has to be cooked well but it should not become mushy.
-in a heavy big open flat vessal(Uruli), add jaggery or brown sugar and add half a cup of water. In low heat, heat the jaggery with water mix, once the jaggery is melted fully, filter the water to remove any small stones or dirt.
-heat the jaggery water again until it becomes little bit thick.
-open the pressure cooker, add slowly the jaggery water to the cooked rice, added grated coconut, dry giner, cardomom power, ghee and mix well. Once mixed, offer hot payasam to Lord Sri Guruvayurappan.🥗🥗

இது அந்த கோயிலில் பணிசெய்யும் பணிக்கர்கள் மட்டுமே நோன்பு இருந்து இதை சமைப்பார்கள். அவர்கள் இதை துளியெனும் நாவில் வைக்காமல் பக்குவமாக சமைக்கபடுகிறது. ஒவ்வொரு துளியும் சுவை மிகுந்தது சுகாதாரமுடையது மனதிற்கு மகிழ்ச்சியை அளிக்கும்.

செய்முறை........🥗🥗
1. சிவப்பு மட்டா அரிசியை நன்றாக 3 அல்லது நன்றாக கழுவி கொள்ள வேண்டும்.
2. இப்பொழுது பிரஷர் குக்கரில் 4 கப் தண்ணீர் விட்டு அரிசியை சேர்த்துகோங்க நன்றாக 4 விசில் வரை விட்டுகோங்க.
3. நன்றாக வேக வைக்க வேண்டும் ஆனால் குழைந்து விடகூடாது.
4. இப்பொழுது ஒரு அகன்ற கெனமான பாத்திரத்துல கருப்பாக உள்ள வெல்லத்தை அரை கப் தண்ணீர்சேர்த்துகோங்க நன்றாக சிறுதீயிலேய கொதிக்க வைக்க வேண்டும் , வெல்லம் முழுவதுமாக கரைந்தவுடன் குப்பைகளை வடிக்கட்டவும்.
5. மறுபடியும் அடுப்புல வைத்து நன்றாக கருப்பு வெல்ல கரைசலை நன்றாக திக்காக வெல்ல கரைசலை காட்சியதும்.
6. பிரஷர் முழுவதுமாக அடங்கியதும் குக்கரின் மூடியை திறந்து அதில் வெல்ல கரைசலை ஊற்றி அதில் தேங்காய் துருவல் மற்றும் சுக்கு , ஏலக்காய் பொடி களுடன் பசுநெய்யை சிறிது சிறிதாக சேர்த்துகோங்க நன்றாக கிளறி இறக்கி பரிமாறவும்... 🥗🥗

-Dry ginger or sukkhu powder - 2 spoons
-Panchai karpooram - a very little, less than 1/4 pinch
-salt - 1/2 spoon
-water 2 cups
Methods :
- Add all the ingredients together, mix well.
- offer to Lord Sri Guruvayurappan.

- Black sesame seeds - 1/4 tea spoon
-Milk - 1/2 cup
-Coconut pieces or bits - 1/2 cup
-Cardamom - 3 spoons
- Salt - 1 pinch
Method:
- Add rice flour, wheat flour, jaggery powder together.
- fry coconut bits in a spoon ghee and add to the mix.
- add sesame seed to the mix and add all the ingredients together.
- add water to the mix and mix well and make it like a iddle batter.
-Keep the batter aside for 2 hours.
-In a heavy pan, heat oil (2 to 3 cups of oil to fry) in medium heat.
-take a scoop full of batter and pour to oil. Fry this batter in medium heat until the Neiappam
turns to maroon color. Turn Neiappam frequently so that it is fried properly and fully.
-Make all the Neiappams and then, offer to Lord Sri Guruvayurappan as naivedhyam.

-Cook rice in 3 cups of water.
-add 1/4 cup of water to jaggery powder
-heat it in a pan until it thickens - for 5 mins
-add cooked rice to jaggery and stir well for a few mins
-add 2 teaspoon of ghee to mix and mix well
-keep stiring the mix 7 mins.
-fry coconut pieces in ghee and cardamom powder. Add this to rice and mix well often until it thickens.

Guruvayur Temple Rasakalan Recipe:
This is a special dish made in Guruvayur Temple, Kerala, India. It has special taste unique and fresh.
Ingredients
1/2 kg pumpkin (cut into small cubes)
1 kg ash gourd (cut into small cubes)
4 green chillies (sliced)
1 cup grated coconut
2 tsp cumin seeds
4 green chillies
2 cup yoghurt
2 cup buttermilk
Salt as required
1/2 tsp turmeric powder
1/2 tsp pepper powder
6 tsp crushed red chillies
4 sprigs of curry leaves
2 tsp cumin powder
2 tsp ghee
2 tsp mustard seeds
Preparation
Please in a uruli or broad vessal pour pumpkin, ash gourd, green chilies, crushed red chilies, pepper powder, turmeric powder, salt and curry leaves together.
Cook until the mixture turns tender for 12 minutes or more.
Grind the grated coconut with cumin seeds, 4 tbsp yoghurt and green chilies
Add the coconut paste into the cooked veggies
Add yoghurt and cumin powder too
Mix well with mixture.
Heat coconut oil in a pan
Splutter mustard seeds
Sauté crushed red chillies and curry leaves
Add this mixture into the curry
Offer Rasakalan as naivedhyam to Lord Sri Guruvayurappan with cooked rice!!

Preparation

- one tea spoon of yogurt or curd.
- one spoon of ghee (melted butter or clarified butter)
- In a glass container or corningware or porcelain container add a spoon yogurt, mix well. Please do not use metal container in microwave.
- add one spoon of ghee and mix well
- pour the condensed milk from can to the mixture and mix well.
- microwave the mixture in the container for 3 minutes.
- take the container out of microwave and stir the mixture well
- microwave the mixture for 2 minutes and take the container out and stir the mixture well
- microwave the mixture for 1 more minutes and take the container out and stir the mixture well.
- microwave the mixture for 1 more minutes and take the container out and stir the mixture well.
- let the mixture cool down for 4 or 5 minutes. Stir the mixture well.
- Now Thirattipal or palkova is ready.
- Offer to Lord Sri Guruvayurappan as naivedhyam.
